karahi is a type of dish , circular, and deep cooking-pot that originated in the Indian subcontinent. You can say it wok. this dish from Pakistan which we make in karahi  a blend of meat (Goat , Lumb , chicken), Onion , tomatoes, green chilies, garlic , gingerand spices cooked on high heat.

There are many variations of this dish in different cities of Pakistan. Some times with full spices and ingredients, sometimes less spicy.
Today i made Lahori Karahi with lamb meat, you can also cook it with goat meat if you wanta. A delicious recipe which is not too dry, you can serve it with roti or nan.

Ingredients:
 1) 1 kg mutton or lamb meat with bones 
2)  onion 3 medium (about 200 grams) 3) tomato 5-6 (600 g) 
4) Salt 2 tbsp 
5) Red pepper 2 tbsp 
6) turmeric powder 1 tbsp
7) fresh ginger julienne cut 2
8) green pepper 3-4
9) yogurt 1/2 cup 
10) Spice powder 3/4 tsp 
11) lemon juice 1-2 tbsp 
12) Cooking Oil 1/2 cup 
13) Fresh coriander fresh

Cooking Method:
keep pan on stave, add oil and heat it up.
Then add whole garam masala, ginger and garlic paste.
Saute for few minutes on high heat.
Now add mutton and cook on high heat until it changes color.
Then add fresh tomatoes without skin, green chilies and water.
Cover the pan for 30 minutes on low medium heat.
After 30 minutes, mix the tomatoes using a spatula and saute curry on high heat.
Then add further spices like red chili powder, turmeric powder, and coriander.
Stir the pan until the spices fully cooked.
Now add yogurt and cooked again on high heat until the yogurt fully blends with curry and showing one tone texture.
Add garam masala powder and mix well.
Cover the pan and cook for about 5 minutes on low medium heat until the oil floats on the surface.
Now karahi is ready to serve.
Garnish with green chilies and julianne ginger.
